What would be some good plants to add into it, what would be a good size, what would be a good way to keep the humidity up, and any other tips, or opinions would be greatly appreciated. Thanks a lot!

If your enclosure is sealed for the most part (no screen) you may have more of an issue keeping the humidity down... I have an animal plastics cage with a few small holes in the back, big vents which I closed off, and only soil / some grass and my humidity is always atleast 85%, mornings even higher.
Typically when people do living vivs, they do different layers with some drainage balls at the bottom, a layer to keep the soil from falling between the balls, a layer of coco fiber...something along those lines. I was just reading last night on uroplatus specialties (Jay's site) a PDF about that.
