A week delay will not do him any harm - just watch your fingers if he is getting really hungry!! They can go for weeks without feeding - but they will be more likely to consider anything warm that moves as something to eat.
I have never heard of anyone getting cal kings to eat insects. The only viable alternative to rodents is chicks, but they are usually harder to locate. Cal kings will usually readily feed on other snakes, but not likely something you want to consider. Really there is just not that much of a problem to let him go hungry for a week or so.
You also might want to consider going with larger prey than pinkies if he is approaching 2 feet - I expect he could be taking large fuzzies or hoppers by that size (if you were referring to mice - I just realized you might have meant pinky rats).
