Pinhead crickets refers to the size - about the size of a pinhead. They're newborns if you want to consider it that - usually less than or not much older than a week, just tiny little suckers. Regular is usually considered half grown or older, adults or just about full grown, though under a month old. Around a month or so they are mature enough to breed, and don't have much time left. They're also a bit tougher for chewing, like a cheap steak.
