I will be referring back to this post with all related future questions.

Do I need to peel the harder veggies, (i.e squash, yucca root etc.) before serving them?

i do not peel my squash just cut it up into small bites. im not familiar with yucca root.

I usually shred the yucca root, and slice the squash paper-thin on the mandolin, but I though I read that most times the almost or peel is really bitter, which Is the reason I ask. Seems like some do and some don't. Interesting!
