Cricket Breeding

So I've decided to try my hand at a little cricket breeding, but I don't know much so bare with me. I have two tanks set up, and in the breeder tank, I have a dish with a few inches of moist peat moss. It's been in there for about 48 hours, and I noticed last night that there was some mold growing on the surface. So my questions are...

1) Do I need to worry about the mold? Will it harm the eggs or crickets? I removed it, but I'm sure it'll come back.
2) How do I keep this from happening?
3) When do I remove the container, and do I put the lid on it?
