Blue eyes in rabbits (like dogs and cats) don't always link to a pure white coat. As an example, Dutch rabbits have blue eyes, and they are about 50/50 black and white. I've also seen white rabbits with red eyes. However, don't know whether a pure white rabbit with blue eyes is linked to deafness as it is in cats.
If the bun is not an obvious mixed breed, you can look up the breed's available colours, and sometimes you'll find information on the genetics behind them as well. I've never heard the term 'leucistic' being used in rabbits.. I don't know whether they would be considered albino without looking it up. Often small animals are reffered to as REW (red-eyed white) PEW (pink-eyed white) and I'm at a loss for blue eyed..
