Are you sure that's a strike pose? Normally they curl up into a S shape like this

Eli, I keep Brazilians myself, and they will often nip without going into strike pose. The bite odds, curiously, increase when you set them "free" to play...they tend to regard you picking them up again as a recapture, and sometimes nip. That said, they definitely get better about it as they grow and get more used to you.
