I was thinking about makeing my enclosure out of pine instead of melamine just think it would look nicer finished. What would be the best thing to use to coat the inside to water proof it??

Fiberglass resin (epoxy). Can be difficult to work with and is super toxic while wet, but other than marine enamel, is the only coating you can apply to wood that will waterproof it. Polyurethanes and the like only resist moisture to an extent.
