Corn snake always jumpy

Hello all,

My 2+ year old corn has recently become very jumpy/skittish. I'd say within the last few months or so. I used to be able to touch her, pick her up, hold her at almost anytime and without any fear, but now I am actually scared to hold her. Yesterday I got her out and put her down and she kind of came at me with her upper body raised. If I pet her in her terrarium, she will jump and dart to the other side. I used to be able to touch her head without her caring and now she jerks back into an S-shape. She still eats normally, on schedule, eats enough, plenty of heat and humidity, etc. She's healthy but seems to not trust me anymore even though she has no reason not to.

Should I add more hides? Should I take some out? Even if no one has an answer for WHY she is being this way, can anyone tell me how to go back to being able to handle her/calm her down? I don't want to fear my snake
