We got her last night and the other half held her briefly then to move her into her viv, she is friendly and is a year old, shes clearly used to being handled, but we don't want to stress her out. Also she is used to being fed every tuesday, would it harm her to feed her sunday this week and then do sunday from then on?

If she is a year old and used to handling I would give her a few days in her new viv and a meal ,then start handling 10 min a day 1 session only but not within 2 days of eating. Changing the feeding is no problem.

Does it make a difference that she came with her own viv? we kept the substrate she had in too as the previous owner had only changed it a few days ago

It really depends on the snake. I would make sure it's had a meal and then give it a few days to digest, which would probably put you at around a week.
