Found out my butcher carries rabbit. I haven't had rabbit in years and my family has never tried it. 3.5lb rabbit.

We eat rabbit all the time. Its great but being Italian I have no recipe.. Lol

Then spices like salt, parsley, oregano, etc

Do you roast it?
I was thinking of brazing it on the bbq then roasting it with onions, mushrooms, beans and carrots and serving with roasties.

We found that roasting it makes it disapear and shrivel up. I prefer diced rabbit as it is cheaper as you dont buy the boness just the meat and then whack it in a pie

Rabbit is a very very common food in my fathers culture (egyptian). They also eat pigeon (not wild ones lol). Its hard to find, so my dad is planning to start a rabbit colony soon haha
I think they make stew/soup usually

I think you just put it on a stick and cook it like a marshmallow, I know it because I have seen it in lots of movies so it has to be true. :)
Only hat it once and it was fried like chicken.

You could always just stew it with wine and mushrooms and stuff. Or make rabbit French. I don't know how it would turn out, but you could always make huli huli or shoyu rabbit. That sounds like it would work.
I'm hungry now.
This one looks pretty good

I eat a huge number of jackrabbits. Mostly stew, pressure canned to reduce the chewiness. One thing that helps no matter what recipe you use is to boil it in water for about an hour scooping off the layer of gross foam that floats up. Then you can strip the meat of the bone or cook however.
Not sure if you have a pressure canner, or if you'd like it but I could go shoot one and make a tutorial on how I do it.

Well I roasted it for about 3 hrs with beans and carrots. Had mashed potatoes with it. Turned out great. Thanks all. I plan on making this a weekly meal.
