I have noticed in many signatures they have "1.0.0 leopard gecko".

What does that mean?

It's a standard short form in the herp hobby.
1.0.0 means: 1 male . 0 females . 0 unsexed
The formula is always in order of male . female . unsexed (too young or unknown for other reasons)
