Im having a little bit of trouble getting one of my snakes to eat, Im wasting alot of rats because every time she doesent eat, I have no other snakes eating rats, therefor all i can do is throw them out.

Generally speaking, from what i read, it is not recomended. I have read that it is ok to wrap it up well and keep it for a day or two (though i would not recommend more than one day). and rewarm it in hot water. And i would only suggest doing that if it was rapidly thawed the first time and refrigerated within 10-15 minutes of that. You decide. Hopefully others will have some input
weigh the cost of the rat vs. the vet

Would you eat a steak that was thawed, and then re-frozen? I hope you answered no. Same answer for re-thawed rats.
