I just picked up my first jungle carpet from the Tinley Park IL show and when I handled her at the show to make sure everything checked out she was super docile no striking at all and upon getting her home taking her out of the container for a bit as I was putting her in her enclosure she was still a pleasure to handle. Well now I had to go in the next day to change the water bowl she defecated in and she struck at me twice. Any reason for the sudden behavior and she should tame out over time with proper handling right ?

Welcome to the forum! Your carpet python is still adjusting to its new home, so give it some time before you start handling it.
(I'm assuming it's a young carpet?).....which are typically fairly "bitey". They mellow w time and size. All you are to the snake is a big predator with grabby hands. Give it time.

Yes it's a young female ..2 months old . I will give it some time before handling. Hopefully she will calm down
A cage hook will save you a whole lot of skin punctures. Don't make reaching directly into into the cage a habit.
It may have seemed docile at the expo as well as while you were inspecting it because it was a bit on the cool side, and now that it has proper temps it is acting completely normal for a new snake/baby carpet python.
