So with my Viv's humidity at about 50% I always seem to get moss growing on parts of the driftwood inside the viv. I'm just wondering how people successfully incorporate real wood into their enclosures without getting moss problems

Moss actually isn't the easiest thing to grow in a vivarium. You must have good lighting. I don't think you need to worry about the moss harming your pets to be honest. If its really important to the look of your cage I would just say scrub it off with a wire brush every now and then.

Is it moss or mold? If it's moss, all you can really do is just scrape it off regularly, as I assume there are other things in the viv that need UV from your lighting.
If it's mold, introducing springtails to the enclosure would do the trick.
