Based on what I've read, a lot of people control their UTH with a plug in lamp dimmer. I was going to order one, but I need to know if i can connect multiple heaters to it or do i need to buy one for each tank. Thanks in advance.

It depends on the max wattage the dimmer is rated for. Most heat mats are fairly low wattage, so you can probably run several through one dimmer.

If you do connect multiple UTH's to one dimmer, you're probably not going to be able to adjust the temps in each enclosure correctly that way.

Yes if all the uth are the same wattage/size. Ive used them but they are a pain and have to be watched closely since they dont change with the room temps. Also they are very touchy, at least mine is. If you move it even a jot it will change the temps.
Ive slowly moved away from dimmers and bought those Hydrofarm thermostats.

Most would recommend a thermostat rather than a dimmer. More accurate and will adjust the temp properly regardless to uncontrollable changes like weather.
