This is going to sound bad, but...

Put the fish in a bag.
Tie the bag.
Make sure the bag is a STRONG bag.
A good, solid, SMACK against a hard surface will do it instantly, and no mess.

yo know what i do................buy some gneral fish anesthetics, put the fish in a bucket with enugh anesthetic to put it too sleep, than put it in a bag of water with alot of anesthetics.....(overdose)....................and bingo.....................ofcourse i had a 10 inch black piranha 1 didnt have much choice >(

oops forgot..........you put the fish into the freezer when it is in the bag.........................most important part................make sure its a thick bag >(
