As Nice as Renji behaved (outside at-least) His lady made up for it. She did not want me to take pictures of her, and her mood swayed to 'nope' in mere seconds!

Very simply put. t- produces no Tyrosinase, which a snake needs to produce melanine So they lack all black pigments.. A t+ (sometimes reffered to as caramel albino) does produce tyrosinase, but the body cant use it. However at a later age they can possibly produce some level of melanine, it really varies. The parents of this animal maintained this look into adulthood, so i have good hopes she will as well. She is also over a year old and shows no pigments so far :D . T+ sunglows look amazing!

What exactly is T+? I see the term being passed around but am not quite sure what it is.

T+ and T- are abbreviations for tyrosinase positive and tyrosinase negative. Tyrosinase is an enzyme (notice -ase) that acts on the amino acid tyrosine (an important part of melanin). So, a T- animal cannot produce dark pigments, because there is no tyrosinase to trigger the production of melanin, these are your classic albinos that are mostly white and yellow. A T+ albino has functioning tyrosinase and can synthesize to a point, creating some pigments related to black melanin, though they cannot produce black melanin itself. An example of a T+ albino would be a caramel albino.

Are you able to handle her without the hook if she calms down, or is she a guaranteed hook snake only??

She doesn't calm down, she only gets angrier... I can handle holding her without getting bit, not because of a lack of trying on her end though. :D Its a good idea to use a hook for her, but you have to be carefull because she falls of trying to get you. She's a feisty booger, i love it.
